Mediterranea
Speak and eat Italian! Our
food is representative of local culinary tradition.
Breakfast: at the
Italian bar-pasticceria: cappuccino, espresso, latte, tea, different
kinds of juice, cioccolato, gelato, panini, delicious pastries
(croissants, cannoli, babà, sospiri, biscotti, etc.) etc.
Special Cooking Lunch: During
our Special Cooking Lunch students will prepare and taste
exquisite Italian home made food with our mammas: pasta dishes such as
fusilli, tagliatelle, gnocchi, lasagne, cannelloni, spaghetti
carbonara, etc.; second
dishes of eggplants (parmigiana, caponata, ripieni,
etc.), zucchine (ripiene, fritte), meat (meatballs, vragioli),
fish, etc.; side dishes
of potato croquette, fried potatos and peppers; green salad and
tomatos, bruschetta, etc.; dessert
such as cannuoli, deliziose, torta moretto, etc. Each dish is made with
local organic olive oil.
Each
Special
Cooking Lunch will be accompanied by our traditional home made wine.
Dinner: at restaurants and at a pizzeria; dinner always
includes at least two courses, side dishes, drinks, etc. Choices
include exquisite pasta dishes, pizza, fresh bread, meat, fish,
vegetarian dishes, salad, potatoes, pecorino, parmigiano and
mozzarella cheese, salami and prosciutto, fruit, gelato, etc.
Individual meals will be prepared upon student's request. During our
cooking lab students will prepare and taste exquisite Italian home made
food.
The Cuisine Special
Guest for the Summer 2013 will be Tommaso Affaldano, one of the best
gelato (Italian ice-cream) maker in the world (for more information see
our special guests web page). Students will also have the
opportunity to work with the following: Mr. Stilla, one of the best
pastry-makers in Italy (for more info see the remarks given by Joanna
Joka and others at our student evaluations web page); Enzo, special chef from
Corsini Restaurant; Fiore, a bread,
pizza, and local pastries maker; Franco Bifano and Leopoldo Bellucci, our
experts of wine and
olive oil; and of course our mammas Anna Maria, Nella, Fifina, and
Carmela, who can teach you how to prepare unforgettable traditional
Italian meals.
